In a bowl add All-purpose flour, ajwain, butter, salt and mix well to make a dough. The texture before the dough is made should be coarse. Make a soft dough and keep it covered by a muslin cloth for 15 mins

On the kitchen counter make balls from the dough and roll with rolling pin. With a knife cut four sides but not completely through but just keeping the centre intact.

Cut further halves of those already cut to make petals. Just taper the edges to make pointed centres and with the back of the knife make lines to show flower lines. In the centre add the whole black pepper corns.

Completely for the whole lot. In a wok heat oil and gently add the flower Mathi’s to the oil. Don’t turn immediately and let it fry for 1-2 mins. Flip gently and let the other side fry.

Complete the batches and plate to enjoy with your favourite beverage. Mathi is ready
