  • 1000 gPork belly joint
  • 2Spring onion
  • 1Onion
  • 1/2Garlic bulb
  • 10 gGinger
  • 1200 mlWater
  • 1 tbspSoy sauce
  • 3 tbspSake (Dry white wine)
  • 1 tbspMiso (Japanese miso)
  • 1 tspInstant coffee
  • Mooli (Radish) Kimchi
  • 500-600 gMooli (Radish)
  • 1/2 tbspSalt
  • 1 tbspKorean Chilli Powder
  • 1 tspSugar
  • 2 tspAnchovy sauce (Fish sauce)
  • 1/2 tbspHoney
  • 1/4 tspGrated garlic
  • 1/8 tspGrated ginger
  • Ssamjang
  • 2 tbspGochujang
  • 1 tbspMiso
  • 1 tbspSake (Dry white wine)
  • 1 tbspSugar
  • 1/2 tbspSesame oil
  • 1 tspVinegar

Steps

60 minutes
  1. 1

    Cut the mooli (radish) in matchstick size

  2. 2

    Add 1/2 tbsp salt and mix well

  3. 3

    Drain the water and leave it for 20 minutes

  4. 4

    [ Kimchi paste ] Put grated garlic, grated ginger, Korean chilli powder, sugar, anchovy sauce (fish sauce) and honey in a food bag or small bowl.

  5. 5

    20 minutes later, gently squeeze the mooli (radish) and mix it with the kimchi paste

  6. 6

    Carefully mix the mooli and kimchi paste
