Wash the eggplants and cut them in half lengthwise. Place them on a baking sheet and lightly score the inside. Sprinkle with a little salt and olive oil, then grill for about 30 minutes until golden brown.

Remove them from the oven and use a spoon to slightly open the inside of each eggplant.

Slice the onions into rings and chop the garlic into small pieces. In a large pan, heat some olive oil and sauté the onions and garlic, stirring constantly. Once they soften, add the tomato paste, salt, pepper, and a cup of water, and let them simmer for a while.

Next, add the parsley and feta cheese, stir, and turn off the heat.

Fill the eggplants with the mixture, drizzle with a little olive oil, and add 1/2 cup of water. Bake at 390°F (200°C) for 45-50 minutes until golden brown. Our dish is ready. Enjoy!!
