Ingredients

  1. Marination
  2. 20Large Prawns
  3. 2 TbspPlain Flour
  4. 2 TbspCorn Flour
  5. 1/2 tspSalt
  6. 1/2 tspGround Black Pepper
  7. 1Egg (any size)
  8. 100 mLVery Cold Water
  9. 2 TbspSriracha
  10. 2 TbspLemon Juice
  11. Flour Mixture
  12. 60 g/ 1/2 cup Plain Flour
  13. 60 g/ 1/2 cup Corn Flour
  14. 1 tspGarlic Powder
  15. 1/2 tspGround Black Pepper
  16. PinchSalt
  17. Sauce
  18. 100 g/ 1/2 cup Mayonnaise
  19. 2 TbspSriracha
  20. 1-2 TbspHoney
  21. Salt to taste if needed
  22. Cooking and Garnish
  23. Vegetable Oil (Enough to Deep Fry)
  24. 1Spring Onion

Steps

  1. 1

    Add all marinade ingredients (except the prawns) and whisk well.

  2. 2

    Add prawns and refrigerate for 30 minutes or ideally overnight.

  3. 3

    Meanwhile, prepare the flour mixture and line a tray with cling film

  4. 4

    When ready, toss the prawns in the flour mixture until evenly coated and place onto cling film.

  5. 5

    Whilst the flour mixture absorbs, prepare the sauce by mixing all ingredients together. Chop up the spring onion for garnishing later also.

  6. 6

    To cook the prawns, heat the vegetable oil in a deep frying pan at medium/high heat until a wooden spoon/skewer fizzes.

  7. 7

    Place the prawns in batches into the hot oil. Flip after a minute and let cook for a further minute.

  8. 8

    Remove the prawns from the oil and dry on tissue roll. Once excess oil has been absorbed, toss in the sauce and plate up.

  9. 9

    Drizzle over the remainder of the sauce if you wish and top with chopped spring onions
