Kosambari A Protein Rich Lentil Salad

Kosambari, also known as Hesaru Bele Kosambari, is a super Healthy and Tasty South Indian style Lentil Salad.
This Colorful, Attractive and Protein-rich salad is sometimes eaten as snacks or side dish with main course, but usually served as an integral part of each festive meals in Karnataka state.
It is prepared mainly with Yellow Moong Dal(Split Green Gram), grated Carrots, freshly grated Coconut, finely chopped Cucumber and seasoned with Mustard seeds & curry leaves.
I have skipped the tempering part here to keep it a #nofire recipe. Trust mein, a dash of lemon juice, salt & fresh coriander leaves were good enough to complete it's amazing taste.

Firstly, wash properly and soak the yellow Moong dal in enough water for 1-2 hours. Then drain off the excess water.

Now in a bowl, add strained dal, grated carrots, chopped cucumber and combine well. Add salt, lemon juice, chopped coriander leaves, green chillies, pomegranate pearls and grated coconut too. Give a good mix.

Serve this salad immediately with your main course meal or enjoy this as a healthy snack!
