This vegetarian dish is easy and tastes great. You can use onions instead of leeks. If you do use onions, let the first batch caramelize really well....it's worth it!!

Rice alone is boring but mixed with lentils and some onions it's another story! Goes really well with some sauteed veggies for example.

My step daughter loves cooking and she makes some delicious foods. She came across a spicy red lentil recipe once and we tried it. It was yum. I wanted to make it tonight but couldn't find the recipe. This is for Leela. I threw together spices that I thought would recreate the recipe we made together while adding in more heat and warmth that I was craving.
