Andrajos (Traditional Jaén Stew)
Steps
- 1
Sauté the rabbit pieces in olive oil.
- 2
Add the potatoes, cut into small cubes, along with the bay leaves and food coloring.
- 3
Blend the bell peppers and add them to the pot. Stir in the paprika, oregano, cumin, and mint.
- 4
Add enough water to cover the ingredients and let it simmer gently.
- 5
Meanwhile, pour 1 cup of water into a bowl and gradually add the flour, mixing until you have a dough.
- 6
Divide the dough into 4 pieces and roll each one out as thin as possible.
- 7
Tear the dough into pieces and add them to the pot. Cook until the dough is tender to your liking (I prefer it al dente), and it's ready!
