Ingredients

Serves 3 servings
  1. For the Purple Sweet Potato Gnocchi
  2. 10 1/2 ozcooked purple sweet potatoes (300 grams)
  3. 1/2 cuppotato starch (60 grams)
  4. 1egg
  5. as neededVegetable oil (such as sunflower oil) for frying,
  6. as neededSalt and dried oregano,

  1. 1

    Wash the purple sweet potatoes and bake them with the skin on in a conventional oven at 350°F (180°C) for about 30 minutes. Let them cool slightly, then peel and place them in a bowl.

    Add the potato starch and egg, and mix by hand until you have a uniform dough.

    Shape the dough into classic ropes, cut into bite-sized pieces, roll each piece over a gnocchi board or fork to create ridges, and place them on a baking sheet lined with parchment paper.

    Meanwhile, heat the vegetable oil and fry about ten gnocchi at a time.

    Drain them in a bowl lined with paper towels, season with salt and dried oregano, and enjoy them warm—they disappear in no time!

    As you'll see from the photos, frying turns the purple color into a chestnut brown.
