Wash the purple sweet potatoes and bake them with the skin on in a conventional oven at 350°F (180°C) for about 30 minutes. Let them cool slightly, then peel and place them in a bowl.

Add the potato starch and egg, and mix by hand until you have a uniform dough.

Shape the dough into classic ropes, cut into bite-sized pieces, roll each piece over a gnocchi board or fork to create ridges, and place them on a baking sheet lined with parchment paper.

Meanwhile, heat the vegetable oil and fry about ten gnocchi at a time.

Drain them in a bowl lined with paper towels, season with salt and dried oregano, and enjoy them warm—they disappear in no time!
