Clean and slice the cabbage into strips.

In a pan, lightly sauté the shallot with the extra virgin olive oil. Add the cabbage, and if necessary, add a little water. Season with salt and pepper to your taste.

Cook over medium heat for about 5 minutes, then add the balsamic vinegar. Let it evaporate. Continue cooking for another 10 minutes. Towards the end, add the olives cut into pieces. Let it absorb the flavors and enjoy!
