Ingredients

  • 4 lbpork butt
  • 1 tspkosher salt
  • 1/2 tspblack pepper
  • 1-2chipotle peppers on adobo
  • 12 ozdr. Pepper
  • Bbq sauce

Steps

  1. 1

    Slice pork into 4 quarters and season and brine for 8-12-24 hours WORTH it.

  2. 2

    Dry rub with favorite rub (see other pulled pork recipe). Rest 8-12-24 hours

  3. 3

    Sear pieces (4-6) to help char/render fat. Use cast iron, deglase and add to intsant pot.

  4. 4

    Add 8 oz Dr. PEPPER

  5. 5

    Add minced chipotle peppers and pork. Pressure cook for 1hr 15 min (3hr is fantastic)and natural release. Dont hesitate to cook longer if not perfect. The intant pot is great and forgiving.

  6. 6

    Remove pork, shred and add bbq to taste.

  7. 7

    Notes: can jazz it up with dry rib, your choice...also original recipe skips the browning step.
