Ingredients

  • 2 Tbspolive oil
  • 1/2-3/4of an onion diced
  • 1minced jalapeno
  • 2-4 clovesgarlic minced
  • 3lg sweet potatoes cubed ( i use half russwts as the dish gwts
  • 14-28 ozcan crushed tomatoes
  • 2. 14 oz can coconut milk
  • 1 cuph20
  • 1 tspsalt
  • 1 tspcurry
  • 1/2 cupchopped peanuts
  • 1/4 cuppeanut butter
  • 1-2 cupsspinach chopped

Steps

  1. 1

    Saute onion and jalapeno until soft and fragrant

  2. 2

    Add potatoes and brown a bit

  3. 3

    Add the rest of the ingredients except for peanut butter and spinach.

  4. 4

    Instant pot T pressure for 3 min. Quick release. Add spinach and PB, stiy and serve.
