This unique variety of chaat is a perfect blend of sweet and tangy taste with some crunchiness of Sev and chopped onions(optional)

Assemble all the Ingredients.

Sugar syrup preparation: Firstly, in a saucepan take 2 cup water, ¼ cup sugar, ½ tsp cumin powder, ½ tsp chaat masala and ¼ tsp chilli powder. Mix well and boil for 5 minutes or until a sticky sugar syrup is formed.

Tomato base preparation: Firstly, in a large kadai heat 2 tbsp ghee and saute 1 tbsp ginger. Add 5 cashew and saute until it turns golden brown. Keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, 1 tsp chaat masala and 2 tbsp tamarind chutney. Saute on low flame until the spices turn aromatic.
now add 2 tomato, ½ tsp salt and saute for 2 minutes. Boil for 3 minutes or until tomatoes soften slightly. - 4
Further add 1 potato and saute well. Add 1 cup water and mix well. Cover and boil for 5 minutes or until the ghee separates. Further add 2 tbsp mint and 2 tbsp coriander. mix well. Tomato base for chaat is ready.

Tamatar chaat serving: For serving tamatar chaat, in a plate add prepared tamatar base.
Top with 1 tsp ghee and 2 tbsp fo prepared jeera sugar syrup. Further top with Sev, chopped onions and coriander leaves.
Finally, enjoy banarsi tamatar chaat with chai. - 6
