This has become a family favorite for a quick go-to, Mexican meal. It's easy to make and easy to heat up after a long day. You will need a pressure canner and jars to make this. Ingredient amounts for this recipe is for 1 quart jar. Typically 7 Quart jars will fit in a 23 quart pressure canner.

Ingredients

1 hr 30 minutes
4 servings
  1. 1/2 Cupdry pinto beans
  2. 1/4 Cuprice
  3. 1/3 Cupbell pepper, diced
  4. 1/3 Cuponion, diced
  5. 1 Cupground beef, browned and drained
  6. 4 TablespoonsRotel
  7. 1 Tablespoontaco seasoning
  8. 1/2 Teaspoonsalt
  9. Beef broth to fill quart jars to 1-inch head space

Cooking Instructions

1 hr 30 minutes

    Add the ingredients to each jar in the order above.

    Pressure can quart jars at 10 lbs for 90 minutes.

  3. 3

    To Use: Heat and place in warm tortillas with lettuce, tomato, and whatever other burrito fixings you like.
