Finely chop onions

Fry the onions with some oil in a pan

Dice tomatoes and add to the onion once they turn golden brown

Cool till tomatoes are soft

Break 3 eggs into the mixture and keep stirring

Add salt to season and mix till the egg is cooked fully

Season with coriander
