I really love this recipe from Yora Meta, the crispiness truly lasts. I've made it several times and I'm always satisfied with the results. Indeed, while still in the frying pan, the bananas may look soft/not firm even though they are golden brown, but once drained, they become super crispy. And the crispiness lasts even when the bananas are cold. Highly recommended 👍😍

Mix all the batter ingredients except for the margarine and water, and stir well.

Add the water and mix well, then set aside.

Peel the bananas and slice them into fan shapes.

Heat cooking oil. Dip the bananas into the batter, then fry until golden brown.
