A happy accident. My potato soup tasted a bit bland, so I added chunks of blue cheese.
And it was a happy surprise.

Ingredients

1 hour 30 minut
4 servings
  1. 1/4 Cflour
  2. 2 Cupsheavy whipping cream
  3. 2 quartschicken broth
  4. 4 poundspeeled potatoes I like Yukon gold
  5. 2med yellow onions diced,
  6. 1garlic clove roasted is best smashed
  7. 1 cupsharp cheddar cheese
  8. 1 cupblue cheese crumbles
  9. 1 stickreal butter
  10. 1 cupdiced celery
  11. Baked bacon crumbles not fake bacon bits eww
  12. to tastePepper,

Cooking Instructions

  1. 1

    Boil cubed potatoes in broth till tender with onion garlic and celery

  2. 2

    Make a roux when potatoes are done.use stick of butter and 1/4 cup flour (adjust as needed) when it just starts to get a tiny bit of color....add cheeses and slowly add cream whisking the entire time. Until cheeses are totally melted.

    Slowly stir into broth potato mixture

    Simmer 5 min

  5. 5

    Serve

Waited 49 years to finally move to the "country" whoooohooo. hugelkulture...........permaculture...and rethinking EVERYTHING I thought I knew about food....chickens goats geese ducks guineas...dogs &cats.... wow we are tired & happy!!!! fresh eggs anyone?
