Let’s take green in a pan. When ghee is hot then add grated ginger and saute till turn aromatic. Add chopped cashewnuts and saute untill golden brown. now add turmeric powder, chilli powder, cumin powder, coriander powder, garam masala, chat masala and mix it well.

Now add tamarind chutney and saute on low flame. then add roughly chopped tomato, salt and saute on medium flame until tomato slightly turn soft. Now mashed slightly and then you will see the smooth texture. Now add boiled and cubed potato and mix it well. Add one cup of water and mix it well. Cover it with the lid and boil it for 5 mins. Once the ghee is separated then add chopped mint coriander leaves and mix it well. Now tomatoes base is ready and keep it aside.

For Cumin Sugar syrup: Lets take 2 cup of water in a pan, add 1/4 cup sugar, cumin powder, chat masala, chilli powder, mix it well and boil it for 3 minutes. Make sure the consistency should be little sticky. Now cumin sugar syrup is ready.

Now take the tomato base in a service plate and add 1 tsp ghee in it. Now add cumin sugar syrup, garnish with sev/namakpare, chopped onion, coriander leaves and sprinkle some chat masala. Now Banarsi tomato chat is ready to serve.
