Stir fried Sweet corn or Bhute ko Makai

I had stir fried sweet corn freshly harvested in my relatives place in Sikkim for the first time and loved it . I am sharing the recipe with you all so that you too can enjoy ....I have just changed the method of cooking a bit , my relative had stir fried the corn kernels first and then added the onions etc.....here as I don't get freshly harvested corns so I have boiled the corns first so that it cooks quickly while stir frying it and once boiled it's easy to remove the corn kernels from the cob too. You can use frozen sweet corns also readily available in supermarkets for this recipe.
Apart from cooking time you need time to cool and remove the corn kernels and chopping other ingredients.
It's not vegan-as in this recipe butter has been used ( in vegan food no animal products directly or indirectly are used). If you put out butter from the recipe and use any plant based oil only it will become vegan.

Steps

Firstly peel the corn, wash and boil the corn on the cob, add enough water so that the corn is submerged. Boil covered for 30 minutes and let it cool.

Once cooled, remove the kernels from the cob.

Wash, peel and chop all the onions, garlic, chillies, coriander.

Heat oil and butter in the kadai add onion, chopped garlic and Chillies and saute it for a minute or two, add salt and pepper too in between the process.

Don't brown the onions it should just be soft....add in the boiled sweet corns and saute it for another 8 minutes or so....adjust the flame....don't burn it. Check the salt too if required add. Almost at the end of the cooking add lemon juice, chaat masala as per taste.

Then add coriander leaves too and stir it. Your stir fried corn is ready. Serve hot. Sprinkle more chaat masala or lemon juice, if you want. It's a good evening snack and also good for the in between small hungers. Bon Appetit!!!
