Beetroot fry is a simple and easy way to make a delicious and tasteful dish. Whenever I have too much beets with me, I usually clean , wash and boil , keep in deep fridge to use further. In this way it's easier to remove skin and chop.

Beetroot fry is a simple and easy way to make a delicious and tasteful dish. Whenever I have too much beets with me, I usually clean , wash and boil , keep in deep fridge to use further. In this way it's easier to remove skin and chop.

Arrange the required ingredients.

Heat oil in a kadhai. Add mustard, cumin seeds, chana dal, urad dal, red chillies and curry leaves and saute on low flame till aroma comes and dal changes colour.

Add crushed groundnut and saute for a minute.

Add onion and ginger and fry them till raw smell goes.

Mix chopped beetroot, salt and turmeric powder. Cook in medium heat for a minute. Add dry coconut powder, chaat masala and saute on high heat to dry remaining water in the subzi.

Healthy, colourful and delicious beetroot fry is ready to serve with phulka/poori/steamed rice.
