Leftovers leftovers leftovers. I made smothered chicken last night. My recipe is on Cookpad. I used all my rice last night but I did have half a bag of egg noodles. Dug in the freezers and found frozen partial bags of peas and corn lol par for the course with me. Ingredients

30 minutes
4 servings
  1. Skinless boneless chicken, I used thighs
  2. 1-2 quartschicken broth or stock. If you don’t have that use water with about 2-3 chicken bullion cubes
  3. Salt, pepper, onion and garlic powders
  4. 1 halfbag wide egg noodles
  5. 2 tbspcornstarch
  6. Green onions chopped
  7. I cup frozen corn
  8. 1 cupfrozen peas

Steps

30 minutes
  1. 1

    Add your chicken to a pot and pour in your broth. Add the seasonings, including the bullion cubes if using them, to taste. Poach your chicken on medium/low heat til done. Remove chicken from liquid. Add a little more liquid if necessary. Bring broth to a boil and add the noodles.

    When noodles are done, add the chicken back chopped or not. Make a slurry with the cornstarch and a little water. Add in and stir til it boils and thickens. Add the peas and corn and finish with the green onions.

I'm an army brat with a Cajun mother and an Irish dad. I'm married to the love of my life, David, and we have 2 daughters and 2 grandchildren. I've been a barber for 40 years. Im an old fashioned, old school cook and my recipes are basic. I change them up all the time.Since finding out I’m diabetic I’ve had to rearrange old habits. Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
