Orange & Almond Cake 🍊

A dense, intensely orangey and naturally #glutenfree upside down cake. I absolutely loved this still slightly warm from the oven with a little scoop of vegan vanilla ice cream. Quite grown up flavours and textures, my fussy 7 year old son found it challenging.
This cake also uses the whole orange, including the skins so it helps to reduce waste #CookEveryPart

Place the oranges in a large saucepan and cover with water. Bring the water to the boil then simmer the oranges for 2 hours. Remove and allow to cool.

Cut two of the oranges into quarters and remove any hard pips. Then blend in a food processor until smooth (skins and all). Add the eggs then blend again.

In a mixing bowl, mix the almonds and baking powder together.

Cut the third orange into thick slices and arrange them in the base of a deep springform cake tin lined with parchment paper. Grease the sides of the tin with oil or butter.

Stir the egg and orange wet mix into the dry mix, mix well then pour into the cake tin. Bake at 180 C for 1 hr 30 mins. Cover halfway through to prevent the cake top over browning.

Once cooked allow the cake to cook in the tin for an hour. Then carefully turn out onto a wire rack. Heat some apricot jam in a saucepan and then brush the glaze all over the cake. Done!

I once tried a cake like this.. Took me a few bites/days for it to grow on me. I eventually fell in love with it. But I've never made it or eaten it since.
