Cook 1 liter of full fat milk upto one boil. Turn-off the gas and add in lemon+ water mixture to this.

Milk solids will form.. strain this in a cheese cloth and immediately put it in cold water. Wash and Squeeze.

Now, mash it for 7-8 mins to form fine texture chena. Add 1/4 cup sugar to this and mix.

Add half of the thick coconut milk mix, add saffron stands too.

Now in a pan 1/4 tbsp ghee and to this add the chena mix. now after two mins of constant stirring add the remaining coconut milk.

Keep stirring this till it becomes thick, take some of the mix and try to make a ball if it holds shape then its done. turn off the gas, cover and keep this aside.

While this cool downs a bit cut some aam papad into small squares.

Now, grease your hands and a imprinting tool with some ghee and make two small equal size balls.

Press one ball on your palm a lil bit and put one piece of aam papad on it then sandwich it with another ball.

Now take the imprinting mould sick one side of the shondesh and press gently, maintain the thickness and shape and its done. Enjoy!
