Take the brinjal wash well and cut into four but not completely just the top portion and leave the base intact as shown in the image

Take groundnut sesame seeds and dry coconut in equal proportion dry roast it and grind to a coarse powder.

Mix one tomato purée to this powder,add ginger garlic chilli paste,salt to taste red chilli turmeric and coriander. Mix this well.

Stuff this masala in the brinjal and keep it aside

Now in a pan heat oil splutter mustard seeds and add methi seeds. Now add chopped onion and curry leaves and fry for ten seconds.

Add stuffed brinjal and fry it really well don’t add water the brinjal should get nicely fried for about 3 to 5 minutes

Now add chopped tomato and fry for a minute

Add one cup water and cook till brinjal is tender.The final curry looks a little oily but that’s how brinjal curry should be.It needs extra oil.Garnish with lots of chopped coriander.

It tastes well with anything from plain rice to masala bhath and plain fulka paratha dhapata thali peeth or masala puris fried puris.
