Steps

Take besan in a bowl,add all the spices and salt.Mix well.

Add 1 cup water to besan in batches and form an uniform batter.

Heat a pan and add ghee when warm, add basan batter and lower the flame to minimum.Stir contineuosly to avoid lumping.

After 3-4 minutes,batter is thick.Remove from stove and let it cool.

When besan is cooled add rava and mix.

Add wheat flour portion by portion to form a semi soft dough.Do not add water.

Cover the dough and leave for 10 minutes.

After 10 minutes,divide batter into 2 half.Roll one half into a 1/4cm thik sheet.Cut puris with the help of a cooki cutter or a steel katori.

Make all puris like this,heat oil to hot.

Deep fry puris at medium flame till golden.

Serve with chutney/sauce/raita.
