Take baigan wash them and prick with a knife and put the garlic cloves in it. Then boil it untill they are soft. Let cool them and remove the skin. Mash them.

In a wok add oil heat it. Add cumin seeds and asafoetida. saute few seconds then add onion cook untill they turned translucent.now add tomatoes, green chillies,and mashed baigan.mix together and cook for 5-6 minutes. Then add all powder spices.mix well cook on high flame untill the tomatoes turn soft and baigan has roast well.

When it Cook well add chopped coriander leaves mix well. Turn off the flame.Serve with roti or paratha
