Completely natural, packed full of nutrients and the perfect sweet treat on the go with very little effort required! All you need is a food processor and a set of scales. You can use any type of nuts you want really, I just recommend going with 100g total and make up at least 40% with almonds. Try adding a big Tbsp of natural peanut butter too if you’re looking to bulk them up a bit. #mycookbook

Pop the nuts, oats, peanut butter powder, protein powder and cocoa powder into a food processor and whizz thoroughly until fully broken up.

Chuck in the fresh dates and 2TBSP water and whizz until the mixture starts to clump together to form a sticky ‘dough’.

Take the mixture out of the processor and roll into 20 equal balls. Roll each ball in desiccated coconut. Feel free to drizzle over some dark chocolate too.

Keep refrigerated, can also be frozen.
