First, wash and chop all the vegetables.

Now, put the cauliflower in hot water and boil for 1 minute to remove any insects or dirt, then rinse with fresh water.

Heat a pan on the stove, add a little oil, and fry the boiled potatoes. Remove them, and fry the cauliflower in the same way, then remove.

Add oil to the pan again, add a pinch of cumin seeds, and sauté the chopped onions until golden. In a blender, add all the spices like ginger, garlic, black pepper powder, cumin powder, coriander powder, Kashmiri red chili powder, red chili powder, garam masala powder, asafoetida, and one or two bay leaves. Blend them and add to the pan.

Cook the spices, stirring occasionally with a large spoon. Add the chopped tomatoes and salt, and fry for another minute. Once the spices are well cooked, add a little water and the fried cauliflower. Stir with a large spoon and cook for another 2 to 3 minutes. Now, add a glass of water and the boiled potatoes, cover the pot, and let it cook for 4 to 5 minutes.
