Dry Aloo Gobhi Masala

Heat 2 Tablespoons of cooking oil in Wok at medium flame. Once heated add thoroughly washed cauliflower florets, fry for them for few 3 minutes s, next on add cubed cut potatoes. Mix them together

Fry them on a low flame for about 7 minutes till up to potatoes & the cauliflower florets have some brown spots on them, remove them from Wok and keep them aside for later cooking.

In same wok heat 2 tablespoons of oil on medium flame, add cumin seeds and allow them crackle, now add the onions and cook them for 2 minutes till they turn into translucent, now add Ginger garlic paste and cook for 2 minutes till it’s raw smell goes away.

Add the chopped tomatoes along with salt in helping tomatoes to soften, cover with the lid for few minutes and cook for 2 mins till they are soft.

In a low flame mix it with turmeric powder, red chilli powder, coriander powder, and dry mango powder to avoid them from burning,
Cover the wok with lid and letting the masala cook for 2 minutes leaving the oil from sides. - 6
Add the potatoes & cauliflower florets into it and mix nicely
Add portion of chopped cilantro and mix well - 7
Add garam masala and now cook the potatoes & cauliflower florets on medium heat for about 6 minutes.
Cover the wok and cook more for additional 7 minutes on a low flame till the potatoes & cauliflower florets get tender. - 8
Garnish with freshly chopped Clantro.

Serve hot with Parathas
