Cauliflower Paratha

Mix wheat flour,oil and salt in a large bowl. Add water as required in small incremental quantities and knead a smooth dough. Cover the dough with a plate rest it for 15 minutes.

In the meantime prepare the stuffing. Take a bowl and grate cauliflower. Add ginger paste and mix well.

Heat oil in a pan and add cumin seeds. When it crackle add asafoetida, turmeric powder and grated cauliflower mix it well.

Now add red chilli powder, coriander powder,salt,garam massala and amchur powder mix well and cook on a medium flame for 3-4 minutes, while stirring occasionally. Keep aside.

Now take medium sized ball from the dough. Dust with flour on the rolling board.

With a rolling pin, roll like puri and place stuffing in the centre of it. Bring together all the sides in the centre and seal tightly.

Now roll out like roti. Place it on a hot griddle and cook over medium flame. Spread ghee around its edge and cook it both sides approx 30-40 seconds.

Transfer it to a plate and spread butter on it.
