This is such a simple recipe and super delicious. Made these a few times during lockdown. They went down a treat.

Hubby wanted some cookies and his go to combo is oat and raisins. I'm not the biggest fan of raisins so I substituted it with chocolate.

Ingredients

4-6 servings
  • For the cookie dough:
  • 169 gbutter, softened
  • 140 gbrown sugar
  • 50 ggranulated sugar
  • 2eggs
  • 200 gplain flour
  • 2 gbaking soda
  • 2 gsalt
  • 114 gchocolate chip (dark, milk or white)
  • 50 goats

Steps

  1. 1

    Preheat the oven to 180 degrees.

  2. 2

    In large mixing bowl or kitchenaid (flat mixer attachment) mix together the butter, brown sugar and granulated sugar.

    Then add the eggs one at a time and incorporate well.

  4. 4

    Add the flour, baking soda and salt. Mix thoroughly to incorporate the dough mixture.

  5. 5

    Then add the chocolate chip cookies. Let it all mix in well before adding the oats.

  6. 6

    Once all incorporated, add the oats and mix.

  7. 7

    Leave the cookie dough to rest for about 10 minutes or longer in the fridge.

    With a tablespoon, scoop and shape cookie dough into a round ball.

    Place on baking tray lined with parchment paper. Gently push down on the dough to flatten it slightly. Repeat step 7 until all of the cookie dough has been used.

    Bake cookie dough between 9-10mins. The cookies should look golden brown.

  11. 11

    Rest cookies on baking tray for 5-10 minutes before transferring onto a wire rack to cool down.

    Eat and enjoy cookies on its own, or with a cup of tea or hot glass of milk.
