Dice fruit into 0.33" pieces. Add 0.33C sugar, vinegar, ginger, coriander, salt, and chili to a pot and bring to a boil. Simmer 20-30 min until reduced by half.

Taste and adjust seasoning.

Store in refrigerator or hot pack.
