Steps

Slice the eggplants and sprinkle with a little salt to draw out excess moisture.

Roughly chop the tomatoes and place them in a pot with a drizzle of olive oil and the tomato paste.

Cook for 20 minutes at 195°F (90°C).

Blend until smooth. Your homemade tomato sauce is ready.

Brown the eggplant slices in hot olive oil in a frying pan. Place them on paper towels to absorb excess oil.

Sauté the onions in a little olive oil, then add salt, pepper, bay leaf, and four spice blend. Mix well.

Add the ground beef, stir, and cook through. Then add the tomato sauce, mushrooms, parsley, and cilantro, and mix well.

Cover and simmer on low heat for 40 minutes.

In a baking dish, layer meat, then eggplant. Repeat, finishing with a layer of meat.

Pour the béchamel sauce (or heavy cream) on top, then sprinkle with the cheeses.
