Ingredients

Serves 8 servings
  1. 3 1/3 lbsground beef (about 1.5 kg)
  2. 3eggplants
  3. 2onions
  4. 9 ozmushrooms (about 250 grams)
  5. 5tomatoes
  6. 3 1/2 oztomato paste (about 100 grams; for keto, you can skip this)
  7. parsley,
  8. cilantro,
  9. salt, pepper,
  10. 4spice blend,
  11. olive oil,
  12. bay leaf,
  13. 2 cupsbéchamel sauce (about 500 ml; for keto, replace with 1 3/4 cups heavy cream (about 500 grams))
  14. (Gruyère, Parmesan, Emmental cheese)

Steps

    Slice the eggplants and sprinkle with a little salt to draw out excess moisture.

    Roughly chop the tomatoes and place them in a pot with a drizzle of olive oil and the tomato paste.

    Cook for 20 minutes at 195°F (90°C).

    Blend until smooth. Your homemade tomato sauce is ready.

    Brown the eggplant slices in hot olive oil in a frying pan. Place them on paper towels to absorb excess oil.

    Sauté the onions in a little olive oil, then add salt, pepper, bay leaf, and four spice blend. Mix well.

  7. 7

    Add the ground beef, stir, and cook through. Then add the tomato sauce, mushrooms, parsley, and cilantro, and mix well.

    Cover and simmer on low heat for 40 minutes.

    Assembly:

    In a baking dish, layer meat, then eggplant. Repeat, finishing with a layer of meat.

    Pour the béchamel sauce (or heavy cream) on top, then sprinkle with the cheeses.

    Bake at 350°F (180°C) for 40 minutes.
