Kucho Nimki or Nigella infused salted crackers is a traditional Bengali snack and mostly prepared during festivals like Durga Puja and Holi and is also a common teatime snack.These are basically diamond or rhombus shaped deep fried crackers prepared with all-purpose flour,nigella seeds,salt and oil.Kucho nimki is somewhat like namakpara as it is known in other parts of India.The difference is only that it is made with all-purpose flour and nigella or kalonji seeds are used only to flavour up the crackers.

Ingredients

45 minutes
4 servings
  • 1.5 cupsmaida/ All-purpose flour
  • 1/4 tsp baking powder
  • 2 tbspoil or ghee
  • 1.5 cupsoil for frying
  • 1/4 tsp salt
  • 1/2 tspChaat or Peri Peri Masala
  • 1/2 tspkalonji or nigella seeds
  • 1/2 cupwater or as needed for kneading

Steps

45 minutes
  1. 1

    Mix flour with baking powder,salt,kalonji and 2 tbsp oil.Sift well till crumbly.Add approximately 1/4 cup water or as needed to make a tight dough.Keep covered for 10 minutes.Add 1 tsp oil and knead again.Divide dough into 2 balls.

    Smear little oil and roll out the dough like a chapati or into a thin circle. With the help of a knife or pizza cutter cut into thin strips and then diagonally.Heat oil and fry nimki in low to medium flame till light brown and crispy.

    Sprinkle some Chaat or Peri Peri Masala.Cool and store in airtight container. These crispy fried salted Indian snack are perfect for anytime munching.Serve nimki with a cup of hot tea or coffee or as a quick snack on special occasions like Holi or Durga Puja.
