Didn't cook any ham for the holidays, so it sounded good. This was simple and quick, great for a weeknight meal. This recipe makes 2 large casseroles. You can always tone it down if you want to make less.

Didn't cook any ham for the holidays, so it sounded good. This was simple and quick, great for a weeknight meal. This recipe makes 2 large casseroles. You can always tone it down if you want to make less.

Ingredients

  1. Bagfrozen potatoes O'Brian
  2. 1yellow onion, chopped
  3. 2 lbsVelveeta cheese
  4. 2 lbsham, diced
  5. 1 lbbroccoli florets, small
  6. 1 lbsmoked cheddar cheese
  7. Bagfrozen tater tots

Cooking Instructions

    Grease the bottom of 2 9x13 baking dishes. Evenly spread a thin layer of potatoes Obrien and chopped onions.

    Bring a large pot of water to a boil. Blanch broccoli in boiling water about 45 seconds. Drain with cold water until cool. Set aside to drain.

    Slice Velveeta into thin slices. Layer over the potatoes.

    Layer broccoli florets over the cheese. Then add diced ham. Incorporate it between the broccoli.

    Layer the smoked cheese over top. You can substitute this for any cheese that you like.

    Layer tater tots over the top.

    Bake at 400 degrees for 30 to 40 minutes on the middle rack. If making 2 casseroles, trade places on the racks half way through cooking.

    When casserole is bubbly and cheese is starting to brown, casserole is done. Remove and let sit 5 minutes. Enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
