Chicken and Chorizo Soup

Ingredients

4-6 servings
  1. 1.5 lbschicken medium dice
  2. 1 lbchorizo sausage-casings removed
  3. 1green bell pepper-small dice
  4. 1red bell pepper-small dice
  5. 1med red onion small dice
  6. 1 cupshred carrots- can have small dice too
  7. 1lemon juiced
  8. 1lime juiced
  9. 1 TBSminced garlic
  10. 2 tspsalt
  11. 2 tspcumin
  12. .25 tspsaffron or safflower threads
  13. 1 bunchparsley minced
  14. 1 canwhole corn
  15. 2 cansrotel- no salt
  16. 32 ozchicken broth- mine was salt free store bought

Cooking Instructions

    Heat 5 quart stock pot over med-high heat. Cook chicken and Chorizo.

    Remove chicken and Chorizo from pot.

    Using fat from chorizo to sauté garlic, onion, carrots and peppers. Drain excess fat from veggies and discard

  4. 4

    Add meat and veggies back to pot. Add the juices, rotel, corn, seasonings, and broth.

  5. 5

    Bring to a boil. Reduce heat and simmer for at least 30 min.

    When close to be finished cooking add parsley to pot. If using dried parsley add with rest of seasoning.

    Serve with rice, beans, fresh cilantro, sour cream, salsa, avocado, etc...
