Paratha Week is being celebrated, so I made laccha paratha. It's crispy and very tasty.

Sift the all-purpose flour into a large bowl. Add salt to taste and a little ghee for shortening. Gradually add water and knead into a medium-soft dough—not too soft, not too hard. Cover and let it rest for 15 minutes.

Divide the dough into balls. Roll each ball into a thin circle. Cut the rolled dough into strips using a knife or cutter. Stack the strips on top of each other from the side, then gently roll them up. Tuck the end underneath and sprinkle a little nigella seed on top.

Gently roll out the dough again to make a larger circle. Brush with ghee and cook on both sides on a hot skillet until crispy and golden brown, making sure the layers are visible.

Cook until golden brown and serve hot with your favorite vegetable dish or chutney.
