Christmas cookies dipped in honey, aka melomakarona

Melomakarona is a really special sweet Greeks make for Christmas. They are cookies that are baked and dipped in a sugar-honey syrup. If Christmas was a smell this would be the smell of melomakarona, honey, clove and cinnamon.
This is a professional recipe for melomakarona that my dad used to make in his bakery, if you follow it to the letter you cannot fail.
Happy Christmas everybody 🎄🎄!
