Ingredients

  1. 250 gramseggplant (baigan wash and slit)
  2. 2 tspdry coconut
  3. 1 tspsesame seeds
  4. 2 tbspground nut
  5. 1 tspturmeric powder
  6. 1 tspred chilli powder
  7. 1 tsp coriander powder
  8. 1/2 cuptamarind pulp
  9. 1 tspmustard seed (rai)
  10. 1 tspcumin seeds (zeera)
  11. 1bay leaf
  12. 4-5green chillies
  13. 1/2 cuptomato puree
  14. 1/2onion paste
  15. 1 tbspginger garlic paste
  16. 2 tsp curry leaves
  17. to tasteSalt
  18. as neededOil

Cooking Instructions

  1. 1

    Wash and slit eggplant and fry them till they change it's color

  2. 2

    Dry roast ground nut, sesame seed and coconut.... Grind it and make fine paste.... Keep aside this masala

  3. 3

    Heat oil in pan add bay leave, cumin, mustard seed, curry leaves and green chillies..

  4. 4

    Now add ginger garlic paste and saute well then add onion, tomato paste,all dry powder and add masala we prepared and lastly add tamarind pulp... Cover and cook for 15-20 minutes

  5. 5

    Add eggplant and coriander leaves cook for 5-10 minutes and it's done.... Serve with biryani Or butter naan
