Ingredients

  1. 1Eggplant (bharta big baigan)
  2. 1Onion Chopped
  3. 3-4Garlic Cloves Chopped
  4. 1 cupSpring Onion Chopped
  5. 2Tomatoes Chopped
  6. 1/2 CupPeanut
  7. 2Green Hot Chilies
  8. 1 tspGaram Masala
  9. 1 tspCoriander Powder
  10. 1/2 tspMustard seed
  11. 1 tspCumin Seed
  12. 1/4 tspGinger Paste
  13. 1/2 tspTurmeric Powder
  14. 1 tspSalt
  15. 2-3 tspOil
  16. 1 cupCilantro Chopped

Cooking Instructions

  1. 1

    In oil give tadka on medium flame with seeds, then add onion, garlic and ginger. Cook till brown

  2. 2

    Then chilli, peanuts and tomato

  3. 3

    Till time on high flame roast eggplant from all sides. Then removed skin

  4. 4

    Add all remaining ingredients and smashed eggplant. Mix well

  5. 5

    Cook it for one min and serve with bhakri or Naan
