Cut the fish into 2 or 3 pieces. I didn't realize this until I was just about to simmer it, but I had bought 3 filets! Julienne the ginger.

Put the A) ingredients into a large pot and bring to a boil. Add the sole and the ginger. Bring the heat to medium-low, cover with a lid, and let it simmer. Occasionally, scoop the liquid over the fish with a spoon.

When the liquid has decreased and a shine has formed, it's done.
