Juicy and Delicious Inarizushi

Sometimes I get sudden cravings for Inarizushi!!
Neither strong flavour nor weak flavour will work for aburaage. I settled on this recipe after several tries.

Mixing white rice and sweet sticky rice, then cooking until still a bit firm will make more delicious sushi rice. (Cook using the normal amout of water for the white rice, when you are using 180 ml of white rice and 1 tablespoon of sweet sticky rice.) Recipe by Chococo@Tokyo

Ingredients

10 servings
  1. 5sheets Aburaage
  2. 3 tbsp☆Soy sauce
  3. 3 tbsp☆Sugar
  4. 3 tbsp☆Mirin
  5. 1 tsp☆Japanese dashi stock
  6. 200 ml☆Water
  7. 180 mlWhite rice
  8. 1 tbspSweet sticky rice
  9. 1 tbsp○Sugar
  10. 2 tbsp○Vinegar
  11. 1★Carrot
  12. 1★Lotus root
  13. 1★Cooked bamboo shoots in brine
  14. 1★Shiitake mushrooms
  15. 2 tbsp★Soy sauce
  16. 2 tbsp★Mirin
  17. 2 tbsp★Sugar
  18. 1Sesame seeds

Steps

  1. 1

    Cut aburaage into halves, and pour boiling water over remove excess oil.

  2. 2

    Add aburaage from Step 1 and ☆ ingredients in a pot and cover with an otoshibuta (drop lid), then simmer over low heat. When the water is reduced, chill in the fridge.

    Simmer ★ vegetables and seasonings until water is gone, and chill in a fridge.

  4. 4

    Mix the white rice and sweet sticky rice, and cook until still a bit firm.

  5. 5

    Add the Step 4 rice with ○ sushi vinegar and Step 3 in a bowl, and mix them with a cutting motion.

    Stuff Step 5 rice mixture into the Step 2 aburaage pockets, and sprinkle with sesame seeds, and you're done!!
