This beetroot cheesecake is an easy to make cake which need no baking or eggs in it. Less sugar and addition of beetroot powder makes it a tasty and healthy option in comparison to the other cream cheesecakes. The beetroot powder not only adds the natural sweetness but also light pink color to it making it more attractive. The cake also provides the richness of nutrients like protein, vitamin A, riboflavin, calcium and phosphorus.

Ingredients

1 hour and 4-5 hours for setting in fridge
6-inch diameter in size
  • 2 tspBeetroot powder
  • 1 litreMilk
  • 200 mlFull fat cream
  • 3 tspVinegar
  • 4 tspSugar
  • 1 tspVanilla essence
  • For Cake Base:
  • 50 gMarie biscuits (10 pieces)
  • 20 gButter

Steps

1 hour and 4-5 hours for setting in fridge

    For making cream cheese:

    Take about 1 litre of the milk and boil it for few minutes.

    Add vinegar, allow it to curdle and then close the flame.

    Sieve the cheese and blend it in the blender along with the cream.

    Dissolve the beet powder in 3-4 spoons of the milk.

    Add the beet mixture to the cream cheese then add powdered sugar, vanilla essence to it, then blend till it reach a smooth consistency.

    For making Cake:

    Crush the biscuits into granular powder and mix melted butter to it.

    Place a butter paper at the bottom of the cake pan for easy to removal of the cake after setting.

    Add the biscuit mixture to the cake pan bottom and press with a spatula to make it equal.

    Now add the cream cheese prepared on top of it and allow it to set for 4-5 hours in fridge.

    After setting carefully remove the cake by holding the butter paper and serve it.

“Healthy! Tasty! Recipes” were developed under the Japan International Cooperation Agency (JICA)’s Phase II Project for Crop Diversification in Himachal Pradesh (2017-2022), to promote self-consumption of vegetables by farmers, especially targeting newly introduced vegetables unfamiliar to the farmers.Furthermore, the recipes include ideas of contributing to nutrition improvement in the State as majority of the population in Himachal is found to have health problems such as anemia, hypertension and overweight. Also focusing on the food habits of Himachali, who are generally vegetarians, sources of protein seem lacking in their food. Efforts were therefore made to prepare the recipes based on the following points:1) Use of crops rich in nutrients such as iron and protein2) Use of low sugar, low salt and low fat, following the WHO’s Recommended Daily Intake3) Application of cooking methods to retain more nutrients such as steaming instead of boiling and shallow frying instead of deep frying4) Maximization of value of traditional recipes and use of ingredients locally available for wider acceptability5) Suggestion of “Immunity boosting recipes” using vitamin-C rich vegetables with concern over the spread of COVID-19 infection in India.Remark: Nutrition information of the recipes are sourced mainly from "SELF Nutrition Data", etc.--------------------------------------------------------------------For translation of recipes in Hindi please click on the below mentioned linkhttps://cookpad.wasmer.app/in/users/20736692
