I used to include onions in these, but when I started to focus on their softness, I ended up with this recipe.

The water that you mix into the meat is pretty key in producing soft, fluffy meatballs!
Using katakuriko starch powder gives the sauce a thick texture!
These meatballs turn out great not only with ground pork but even with other ground meats or minced chicken. Just halve the amount of egg if you're planning on using minced chicken, because chicken naturally has more moisture to begin with. Recipe by Fumecchi

300 gramsGround pork
Preparation and Seasoning for the Pork
1 tbspSake
2 tspSoy sauce
1 dashPepper
1Egg
1 tbspWater
2 tbspKatakuriko
Sweet and Sour Sauce
2 tbspSoy sauce
3 tbspSugar
2 tbspVinegar
2 tbspSake
2 tbspWater

Steps

Throw the ground pork and all the Preparation and Seasoning ingredients into your food processor and mix.

Round the seasoned pork into bite-sized balls, and coat with katakuriko (not listed).

Fry for 5 minutes or so in oil heated to 170°C ~ 180°C

Heat the Sweet and Sour Sauce ingredients in a frying pan, and once it starts to bubble, throw in your fried meatballs. Simmer for a little while, and you're all done.
