Snow Mountain Chocolate Cake

My first motivation for making this was to have people who dislike sweets to be able to enjoy this. Then I thought I could remove the butter, and then the eggs. The recipe kept evolving into what it is now.

For the fruits, you can just use raisins, but anything dry works. In this recipe I've left out butter, eggs, and sugar and topped the surface with rice flour instead, but of course you can also use powdered sugar. Recipe by caramel-cookie

Ingredients

6 servings
  1. 200 gramsCake flour
  2. 20 gramsCocoa powder
  3. 2 tspBaking powder
  4. 1bar Milk chocolate
  5. 200 mlMilk
  6. 3 tbspHoney
  7. 80 gramsRaisins, prunes, dried persimmons, etc.
  8. 50 gramsWalnuts
  9. 1 tbspRum
  10. 1Rice flour

Steps

    Cook the walnuts on low heat in a frying pan, on dry-steam in the oven at 150°C for 10 minutes, then roughly chop up. Cut up the raisins, fruits, etc and soak in the rum. Melt the chocolate by immersing in hot water. Once it melts mix in the honey. Preheat the oven to 180°C.

    Combine and sift the flour, cocoa powder, and baking powder. Add to the chocolate from Step 1 and mix with a cutting motion.

    Add the milk and mix. While it's still somewhat powdery add the walnuts and fruit (together with the rum) and lightly mix.

    Pour the mixture into the pan and even out the top. Cook in the oven at 180°C for 40 to 45 minutes.

    Once it's finished baking and cooled, remove from the pan and place on a cake cooler.

    Once cooled, sprinkle joshinko on top and cut.
