Pork loin roulades with cheese and bacon

Cooking Instructions
- 1
Beat the eggs in a bowl, mix in the grated cheese, chopped parsley, some salt and ground black pepper.
- 2
In a hot pan, pour out little pancakes of the egg mixture and fry them, to make 8 in total.
- 3
Beat the pork loin slices with the flat side of a kitchen hammer, until they thin out. Sprinkle on some salt and ground black pepper on each slice. Then lay two slices of bacon on top, and one of the cheese/egg omelettes. Roll them up, and skewer with a wooden toothpick so it stays rolled up.
- 4
Fry each roulade in a pan, so it gains some color, and then place them into a baking sheet. Drizzle with oil, and add a couple knobs of butter. Place into an oven, at 180°C. Cook for 15-20 minutes, depending on the thickness of your pork loin slices.
