Oil-free Almond Flour Muffins

I made some delicious muffins with vegetable oil and almond flour, and wanted to try making an oil-free version. They turned out fluffy, moist and very tasty. The almond flour gives the muffins a rich aroma and they smell amazing when just out of the oven. They were still tasty the next day when chilled. I eat these at work when I feel like having a snack. They are really satisfying.

In Step 2, mind you don't knead it when mixing with the spatula. Adjust the baking time to suit your oven. Recipe by Minimame

  1. 80 grams◎Cake flour
  2. 40 grams◎Almond flour
  3. 30 grams◎Brown sugar
  4. 1 pinch◎Salt
  5. 5 grams◎Baking powder
  6. 80 gramsMilk

Steps

  1. 1

    Put the dry ingredients marked ◎ in a bowl and mix well with a whisk.

  2. 2

    Add the milk to the bowl and mix with a rubber spatula.

  3. 3

    Pour the batter into muffin cups and bake at 180°C for 20 minutes.
