Cooking Instructions
- 1
Saute bacon and chorizo. Remove rendered fat. Don't cook all the way.
- 2
Add fresh ingredients (except cilantro) and saute some more.
- 3
Add beans 6 cups water (or broth), and cilantro. For pressure cook, go 45 minutes for unsoaked beans. For soaked, I went 15 and then natural release for 10-15 before opening vent.
- 4
For stove top, do above and bring beans to a boil, then simmer for 1 - 1 1/2 hour. Only do thus method if your beans are presoaked.

Raised in South Texas in a family of 6, this dish was a staple growing up. It is inexpensive and oh so yummy! My mother would serve this with a batch of biscuits and there was nothing left when we were through. It is still one of my favorite comfort meals to this day. danrutkowski61 -
Calico Beans Calico Beans
It's been years since I've had calico beans and my husband had never tried them. I couldn't find a recipe that I liked for them, and most used ingredients I didn't have at home. We're about 50 miles from the nearest grocery store, so running out for ingredients was not an option. I used several other recipes for inspiration, but this recipe is my creation.
