This bread is somewhere between a brioche and a Viennese bread, like you’d find at a bakery.

Combine all ingredients except the butter and mix for 5 minutes.

Knead on low speed for 5 to 8 minutes. Add the butter in two additions and knead for another 3 to 5 minutes, starting on low speed and increasing to medium.

Shape the dough into a ball and place it in a floured dish. Cover with plastic wrap or a damp towel. Let rise at room temperature for 30 minutes.

Divide and shape the dough as desired. Cover and refrigerate for 2 hours or overnight.

Shape into burger buns, braids, or spirals. Brush with egg wash. Let rise for 1 to 1 hour 15 minutes, but no longer.

Brush with egg wash again and score as needed. For burger buns, sprinkle with parmesan and oregano before scoring. Bake small pieces for 12 minutes at 400°F (200°C).

Bake larger pieces for 20 minutes at 350°F (180°C).
