December is supposed to be wedding celebration month in karachi.our wedding anniversary is on 25dec,which we last celebrated together in 2006,so this year when I arrived at KSA,had prayers that after such a rough hard year 2020 ends with best of best time.Alas our seats were booked for 23dec.it was disappointing,the little hope of celebration together fades away.but Almighty has other plans.only AllahSWT knows dilon ka haal.our luggage is packed & out of nowhere all flights are cancelled on 21 dec.we are staying in saudia till new flight and thats how we celebrate our wedding anniversary together after so many years.as it is really chilly here around 4°c,so I thought to make Batair Qourma ,a dish that is on menu board since long but never have courage to tried in khi's hot weather.2020 surely has made warm new happy memories for our family before ending.!!! Here frozen quails are available with skin on.so first I defrost them,then remove skin.quails are delicate birds with soft meat taste near to chicken.dnt need much time to cook.

Beat dahi smoothley,mix salt, red chilli powder,coriander powder,mace+nutmeg(javitri+jaifal)powder,clove powder. Blanch almonds,remove skin, make paste &mix in dahi. Keep aside.Qourma mai salt thora niklta ho tu taste aur brhta hy so I added little more than usual salt.you can add accordingly

I usually made quorma with crisp fried onions but this time change the way.Choped onions,ginger,garlic together finely in chopper(not paste)but finely chop.heat oil,add choped onions & fried to golden brown.(you can use ginger/garlic paste as well).add sabit garam masala,add spice mix dahi.fry well till oil seprates from masala.

Add battair(quails) in masala carefully,the pot should be big so that quails do not mashed up & breaks joints.it should remain intact during cooking so use spoon less & carefully.add 1+1/2 cup water, let them cook at medium flame. If needed more water can be added.

When quails are tender, add black cumin,pinch of saffron mix in milk.plx note just a thread or two of saffron so not to overcome the colour of qourma but to add smell and essence.it is totally optional.adjust gravy to your taste.we prefer quorma as bhuna bhuna so did not add more water.

Before serving,pour melted ghee & garnish with slivers of almond.we had khubus with Batair Qourma.it was an evening full with happy moments.indeed AllahSWT is great
