Ingredients

40 minutes
04 servings
  • As required Florets of 1 small size cauliflower
  • 1small bowl of green peas
  • As neededSome chopped french beans
  • 1large size sliced onion
  • 2small roughly sliced carrot
  • 2bay leaves
  • 5-6cloves
  • 5-6black pepper
  • 2-3small cardamom
  • stickSmall cinnamon
  • as neededSome cumin seeds
  • 2 tbspDesi ghee
  • 2 tbspcooking oil
  • 2 tbspbutter
  • 1green chilli
  • 2red chillies
  • as per tasteSalt
  • as per tasteRed chilli powder
  • as per tasteBiryani masala
  • 1 cupcurd
  • 3 glassbasmati rice(you can use any rice)

Steps

40 minutes
  1. 1

    In a wok add 3 glass of basmati rice and water to soak rice well for booking(approx 6-7 glass).

    Now add 2 tbsp ghee, some cumin seeds, 1 bay leaf, 4-5 cloves and mix them well at medium flame, till rice is 80% cooked.

  3. 3

    Once boiled 80% switch off the flame and strain the water completely.

    Now in another wok add 2tbsp butter and 2tbsp cooking oil. Then add 1bay leaf, 3-4black pepper, 2red chillies, 1chopped green chilli, some cumin seeds, cinnamon stick and saute for one minute at medium flame.

    Now add green peas to it and cook for 1minute.

    Now add french beans, carrot and cook it for 1minute at medium flame.

    Now add florets of cauliflower and cook till it partially softens.

    Now add sliced onion and cook for 2more minutes at medium flame. If you want you can add cashews also for additional crunch and flavour.

    Once veggies are partially softens, then spread 80% cooked boiled rice evenly on top of these veggies and cover it with lid and cook for 10 minutes on slow flame.

    Once rice are cooked properly,serve them curd or veg raita.
